Before tackling the making of onion confit, you need good onions. Logical no? For this, prefer sweet onions like the Cévennes onion. The main thing is to have onions! As with any other candied preparation, the secret lies in the caramelization. Most often, sugar is used to sprinkle onions previously cooked in butter to make them soft. But you can also choose honey before deglazing them with vinegar, generally balsamic. However, you can opt for wine or cider vinegar to add an extra touch to your recipe. Remember to cut the onions neither too fine nor too large to have a homogeneous onion confit.
– 500 g of sweet onions – 1 C A S of butter (or a drizzle of olive oil) – 3 C A S of sugar – 3 C A S of balsamic vinegar – Salt, pepper
1. Peel and mince the onions. Sweat them in a pan with butter or olive oil for 3 to 4 minutes over medium / high heat, stirring regularly so that they do not burn. They should be translucent without coloring too much.
2. Sprinkle with sugar and let caramelize while lowering the heat. Stir from time to time so that they do not stick to the pan!
3. Deglaze with the balsamic vinegar and simmer over low heat until the onions are tender and candied. Season with salt and pepper and place in a pot before using your homemade onion confit!
Once you have prepared your onion confit at home, all you have to do is put it in a small pot, let it cool and then place it in the fridge. It will keep very well in the fridge for several days, especially if you use honey. Indeed, it is a natural preservative so you can enjoy it a little longer. It is possible to make your onion confit and keep it for several weeks! To do this, you will need to sterilize your small jars in boiling water which will allow you to use it in gourmet recipes several weeks after having prepared it. Onion confit can also be stored in the freezer in small trays or in freezer bags. However, wait until it has cooled down before placing it in your freezer.
